Timballo

One of Ponte Vecchio’s signature dishes.
This is the world’s most luxurious potato dish, where the rich umami and subtle saltiness of caviar enhance the piping-hot potatoes to perfection.

We generously use Italian fresh caviar, untreated with heat, featuring the relatively large-grained Ossetra variety—lavished on the dish in abundance!

We proudly hold the title of Japan’s number one caviar consumer.

Charcoal Grilling

Among various cooking methods, charcoal grilling is often considered the most flavorful.
At Ponte Vecchio, we use a specially designed charcoal grill—essentially a “charcoal oven”—that masterfully reflects heat to ensure ingredients are perfectly cooked.
(This grill was ingeniously designed by Daisuke Yamane.)

Serving charcoal-grilled dishes, hot and fresh, for 100 guests at a wedding reception is an incredibly challenging feat. It’s a level of craftsmanship rarely, if ever, encountered at other venues.

At Ponte Vecchio, we boldly take on this challenge to provide an unforgettable culinary experience.

Pasta

At Ponte Vecchio, we incorporate a wide variety of homemade pasta into our wedding reception menus. While there are many types of pasta, everything except dry pasta is made entirely by hand, starting from the dough.

Pasta is an essential and uncompromising element of Italian cuisine. However, preparing it in large quantities is very challenging, as it can easily become overcooked or cold. Only a few venues can ensure the quality and consistency of their pasta dishes.

At Ponte Vecchio, we limit ourselves to serving one group per day. This allows us to include two types of pasta in every wedding reception menu, ensuring they are served in their best possible condition.
